Servings: 2-truffle servings
Instructions
  1. Process the cashews and coconut in a food processor until they are a coarse, grainy meal.
  2. Add dates, cocoa powder, oil, vanilla, salt and optional ingredients if desired. Process until smooth.
  3. Roll the mixture into 1 inch diameter balls.
  4. Roll balls in shredded coconut mixed with a tiny bit of cocoa powder and chill until firm.
